MISSOULA — The Second Set Bistro is a new addition to the old Florence Building and its name comes from the idea that the second try is where you perfect whatever you are doing -- especially cooking

“The first time you look at it, you taste it, you cook it, and then you give it the second set. You say, ‘this is how we should tweak it’,” co-owner Josh Snider explained. “This is how we do something else and then you get the better dish. This is our polished dished this is our polished performance.

Being the polished dish is a tall order to live up to, especially with an ever changing menu.

“What we see and we have the next morning, that’s what we are going to turn into a dish, every day. So, we are going to have a core base that will change every season and then there will be the outside of the menu that changes every day,” Snider told MTN News. “You can come here seven days a week and still have a different menu.”

It might be a little different approach for Missoula, but it’s something that ownership thinks the city is ready for.

“[The] first 12 weeks here have been pretty mind blowing, you know the amount of reception and help and genuine people and the beauty of the surrounding areas. It’s kind of overwhelming but I think our food and flavor here is something that Missoula is ready for,” Snider said.

Second Set also has a wine menu with around 50 different selections as well as taps with all locally brewed beer.

The new eatery will have true Bistro hours from 11 a.m. until 2 p.m. for lunch and 5 p.m. to 10 p.m. for dinner Monday through Saturday.
